Whey Permeate is also characterized by very good fluidity. It enables the formation of stable emulsions, retaining moisture and reducing the fat content.

Permeate is a frequent lactose substitute due to its composition, namely a very high content of lactose as well as the economic aspect, it is a cheaper alternative than lactose.
