Gouda cheese

Opis

Gouda is a semi-hard full-fat rennet ripening cheese, produced from cow’s milk with a fat content of 45% in dry matter.

The recipe comes from the vicinity of the Dutch city of Gouda.

Ripens about 6 weeks. It reaches full maturity after 10-12 weeks, then its taste is spicy and a nutty note is clearly perceptible.

It has a strong, distinctive smell, juicy, creamy taste and firm, elastic flesh with small eyes. Young Gouda cheese is an excellent table cheese, ideal for snacks or for baking.
