is a type of milk-derived protein that is made by separating casein from whey by enzymes (rennet) in the cheese making process.

Rennet casein is chemically very stable and has good emulsifying properties, which allows it to be used in the food industry as an ingredient in dairy products, such as yoghurts, kefirs, buttermilk, cheeses and milk desserts.

Rennet casein is also used as a component of protein mixtures and as a component of dietary supplements.

It is also a popular ingredient in clinical nutrition and pet food products.
